Santorini tomatokeftedes

Tomato fritters, the island’s best-known meze, made with Santorini’s small, sweet tomatoes.

Ingredients

  • 1 kg tomatoes, chopped small
  • 1½ onions, chopped
  • 2 spring onions
  • A handful of parsley
  • A handful of spearmint
  • ½ courgette, grated
  • 150 g plain flour
  • 150 g self-raising flour
  • Salt and pepper

Method

  1. Cut the tomatoes into small cubes and strain them well.
  2. Mix in all the other ingredients and keep mixing until combined.
  3. Rest the mixture in the fridge for a few hours.
  4. Heat oil in a frying pan to 180 °C.
  5. Take a spoonful of the mix, roll it in flour like a meatball and fry until golden.

Manouri Ouzeri

Soft manouri cheese in a crisp sesame crust, served with sour-cherry spoon sweet (glyko koutaliou vissino).

Ingredients

  • Manouri cheese
  • Flour
  • Egg, beaten
  • Sesame seeds
  • Sour-cherry spoon sweet, to serve

Method

  1. Cut the manouri into pieces.
  2. Dip each piece in flour, then in egg.
  3. Press it gently into the sesame so it is covered all over.
  4. Deep-fry at 180 °C until it takes a nice colour.
  5. Serve with sour-cherry spoon sweet.
